Spinach Strawberry Salad

This is a favorite summer salad – great to bring to a family gathering or barbecue.  I usually do not add the sliced mushrooms for my kids’ sake.  The same holds true for the almonds, my kids are allergic to tree nuts so I omit almonds in this salad.  Also, the original recipe called for ¼ cup oil.  I prefer to reduce the amount of oil used.  It tastes great even if you have just red onion or just green onion on hand.  Pregnancy has made me iron deficient and here is an iron packed recipe the entire family can enjoy.

Spinach Salad

  • 10 ounces baby Spinach
  • half a pint strawberries
  • 1 chopped green onion
  • one half small red onion chopped
  • sliced mushrooms (optional)
  • sliced almonds (optional)

 Dressing

  • ¼ cup sugar
  • 2 Tablespoons vegetable or olive oil
  • 2 Tablespoons apple cider vinegar
  • 1/8 teaspoon Worcestershire sauce

Whisk together ingredients for salad dressing.  Pour over spinach, strawberries, onions, mushrooms and almonds.  Serve immediately.
