Chicken Sausage with Spinach

chicken sausageTime to get serious.  I will have over forty pounds to loose after the baby arrives so I need to start thinking about healthy, low calorie meals.  Here is one that I ate so often two years ago that I needed a break from it altogether.  This is great for lunch or scaled up for the whole family.  Chicken sausage with grilled spinach.  The best part about this meal is that has just over 200 calories!  120 for the chicken sausage (depending on brand), 70 calories for the spinach, 15 calories for the balsamic vinegar and another 16 calories for the Pam.  You ask who is counting?  I am, or at least I will be, soon.  I have found since my stomach is a bottomless pit I can only loose weight by exercising and recording each and every calorie I consume.

Chicken Sausage with Spinach

  • One chicken sausage link
  • Vegetable spray
  • Two cups raw spinach
  • One Tablespoon balsamic vinegar

Start by heating the chicken sausage in the microwave.  Most brands are fully cooked.  If you are opposed to using a microwave you can heat it in just a little bit of water in a frying pan.  Set aside.  Warm a small frying pan.  When hot, coat the pan with vegetable spray and add the raw spinach.  Cook until the spinach is softened.  Add the balsamic vinegar and the warm chicken sausage link.  Saute the chicken sausage for just a minute or two alongside the spinach.  We also love to eat the chicken sausage a side of with roasted yams,  steamed brussell sprouts, broccoli or cauliflower.  Today we ate the Casual Gourmet brand Chicken Sausage with Roasted Red Pepper and Spinach; sold at Costco.
